Roly Poly Sandwiches - Nothing Fried, Only Fresh!
Fine sandwiches and gourmet soups are tradition for one Midlands family and for the past decade they’ve been the foundation of a family owned and operated business as well.
Rebekah Hilbish opened Lexington Roly Poly Sandwiches in September, following in her parents’ footsteps. Her father, Dave Hilbish, owns the Roly Poly Sandwich shop in downtown Columbia and her mom, Lisa Hilbish, serves as the caterer for both locations.
“With the growing community, Roly Poly came to the Town of Lexington because we saw the high demand for more healthy eateries,” Hilbish said. “Also, I personally grew up in Lexington and love the community. Lexington is where we shop at the local grocery and department stores; it's where we attended church, played at the local the park, and where we attended homeschooling functions at local facilities. Lexington is my roots. Being able to offer the Town our product seemed the next best thing.”
The restaurant, located in McCauley Square next to Travinia at 5076 Sunset Blvd, Unit A, employs six people, mostly family. Store hours are Monday-Friday 10am-6pm and Sunday 10am-3pm. The shop is closed on Saturdays. Delivery is available during lunch hours on weekdays from 11am-2:30pm.
Roly Poly Sandwiches caters for any occasion, including birthdays, office meetings, football games, family get-togethers, school lunches, office lunches, and more.
“Catering is our middle name,” said Hilbish, who hopes to open another location after the Lexington shop is well established. “Our catering platters and box lunches make every occasion a success.”
Hilbish believes the healthy selections offered by Roly Poly set the establishment apart from other restaurants.
“Nothing is fried, only fresh,” she said. “Here at Lexington Roly Poly, we are purveyors of fine sandwiches, gourmet soups, and signature salads. We pride ourselves in our fresh, friendly, and fast service.”
But it isn’t all about sandwiches, soups and salads. The primary focus is the customer.
“The most gratifying thing about our job is being able to improve the quality of our customers' lives through their experience with Roly Poly,” Hilbish said. “Here at Roly Poly, we turn customers into friends. That's what is most gratifying to me... being able to touch others' lives, one sandwich at a time.”
