Eggs Up Grill - Ingredients to Make You Smile
The Greater Lexington Chamber welcomed Eggs Up Grill as a new member last week and celebrated the occasion with a ribbon cutting ceremony.
“We serve all the ingredients to make you smile!” said co-owner and operation partner John Aun, who grew up in Lexington. “We are a breakfast and lunch concept. We make everything to order one egg at a time. We make our very own corned beef has in house daily.”
Eggs Up Grill, located at 205 Columbia Avenue, is open and serving breakfast and lunch from 6am-2pm seven days a week. The restaurant’s Lexington location has been open for about 12 weeks and employs 25 people.
Some of the favorites included on the menu are several types of Eggs Benedict, including Tomato Florentine. They also serve grilled blueberry muffins and grilled home fries.
Aun is one of 11 children who grew up in Lexington next door to the current Town Hall. The family ran Aun’s Feed Stable, a local restaurant, from the late 70’s until the early 90’s.
Aun, whose grandfather was Eli Mack Sr, says the most gratifying aspect of operating Eggs Up Grill is meeting people in the community.
“Meeting all the home folks that me and my brothers and sisters grew up with,” he said. “With a large family like mine, I daily meet someone that knows a brother or a sister or one of our kids. Couple that with the great food we serve... I’m having a blast! God is so good!”
The plan is to continue for a long time, according to Aun.
“My father, Michael Aun Sr. once told me as I served a sandwich at our old restaurant, ‘When you serve anything it has your name on it.’ I try to run my business with that in mind,” Aun said. “God is first in my life and I give him all the Glory for the success we have enjoyed.”
